ingredient:

  • 30 ml (2 tbsp) olive oil
  • 2 large brown onions, sliced
  • 2 cloves of garlic, finely chopped
  • 2 cm fresh ginger peeled and grated
  • 30 ml (2 teaspoons) curry paste
  • 1 x 400g can tomato Passata or soft tomato puree
  • 1 x 400g canned coconut milk
  • 8 large eggs, hardboiled and peeled
  • Spices, to taste
  • Fresh cilantro, for garnish
  • Lemon wedges, to serve
  • Bread or rice, to serve

  1. In a pan, heat the olive oil and add the onion slices and saute until soft, adding a splash of water if necessary to prevent them from sticking to the bottom. Cook until slightly caramelized and golden brown, about 10 minutes.
  2. Add the garlic and ginger and cook for 2 minutes. Add the curry paste and cook for 2-3 minutes. Add tomatoes and coconut milk and bring to a boil, reduce heat and simmer for 10 minutes.
  3. Eggs are cut in half lengthwise and added to the curry, season and heat for 2-3 minutes.
  4. Garnish with chopped cilantro and lemon wedges.
  5. Serve with bread for lunch or a light dinner with steamed rice.

Tuna Quiche Nicoise

ingredient:

  • 8 large eggs
  • 30 ml (2 tbsp) flour
  • 150 ml of cream
  • Spices, to taste
  • 1 can of tuna, drained
  • 200 g asparagus or broccoli, blanched
  • 150 g black olives (pitted)
  • 200 g tomatoes, chopped or cherry tomatoes, cut in half
  • 30 g basil, finely chopped

manner:

  1. Preheat the oven to 180°C.
  2. Beat eggs, flour and cream together with spices.
  3. In an ovenproof casserole dish put tuna, chopped asparagus/broccoli, olives, tomatoes and basil.
  4. Pour over the egg mixture and garnish with some cocktail tomato halves and asparagus pieces (if using).
  5. Bake until set and golden, about 30-40 minutes. Serve hot or cold with a crisp green salad.
