Smokey Maraschino Sours
ingredient
- 50ml slightly peaty scotch whisky
- 25 ml orange juice
- 20 ml Maraschino syrup
- 15ml cellulose (Cellulose is a vegan-friendly plant extract powder mixed with water)
- 25ml red wine float (we tend to use Cabernet Sauvignon mixed with club soda and ice cream)
Record*
Maraschino Syrup: When you buy a jar of maraschino cherries, the syrup tends to be waterlogged and not as sweet as syrup would be. Measure the liquid content and cook with sugar and cherries, to make a sweeter syrup. It’s two parts liquid to one part sugar until the sugar dissolves.
Cellulose is a powdered vegan-friendly plant extract mixed with water. You can use other substitutes such as egg whites, chickpea or bean butter brine and clarified milk. It is used to bind ingredients and add texture to the drink.
instructions:
- Add all ingredients (except red wine) to a shaker with ice, and shake well until your hands feel cold.
- Strain through ice in a tumbler, and carefully add red wine to the cocktail.
- Garnish with a maraschino cherry and a lemon wedge.
